Chickpeas may be plentiful on grocery shelves during this pandemic and I suggest you stock up. Before I became vegan I was not a fan of chickpeas. I had only had them practically out of a can and thrown into a salad with no seasoning. I did not know there was any other way. But thanks to recipes I’ve tried over the past year, I can now say chickpeas, also known as garbanzo beans, is one of my favorite foods.
The best part about loving chickpeas is that like most legumes, they are extremely nutritious. They are packed with fiber and protein. Chickpeas can also help with fighting diabetes, heart disease, bone issues, blood pressure and cancer.
I like my chickpeas well seasoned a crispy. That can be achieved olive oil, your favorite seasoning and them roasting them in the oven or sautéing them in a pan. They are also often used as a substitute for tuna and, of course for making hummus. Here are few recipes featuring chickpeas you should give a try.
